Mango Sticky Rice Recipe
We need to talk about dessert.
It's such a great part of the meal— why not top off a perfect night at the dinner table with a sweet treat that leaves you feeling happy? Somewhere along the way it sadly became standard for all desserts to be indulgent, massive, and recipes rich in refined sugar that you either choose not to order at all, or regret shortly after.
Don't get us wrong, there's a time and a place for a slice of triple chocolate cheesecake, but it's also possible to have a sweet treat every night. The secret is to expand your horizons beyond the standard ice cream and cakes. There are plenty of delicious, sweet foods that mother nature gave us, so why not just eat those?
Mango sticky rice is a classic Thai recipe that is sweet, satisfying, and best of all, healthy. It's one of Kelly's favorite desserts of all time— when she was in acupuncture school, she routinely studied at a Thai restaurant in downtown Orlando, and had mango sticky rice for dessert every time. So, if you're a patient at our clinic, you have mango sticky rice to thank for the great care you get during every appointment!
Our recipe uses only a few ingredients: mango, rice, coconut milk, salt, honey, sesame seeds, and coconut flakes. Rather than the standard steamed glutinous rice, we use bamboo rice (also called jade rice), which is rich in chlorophyl thanks to the added bamboo. Mango is an extremely healthy fruit that has 67% of the recommended daily value of Vitamin C per cup, as well as folate, copper, and Vitamins B6, A, E, and K. Mango is also rich in antioxidants, magnesium, and potassium. All of these things make mangos great for your immune system, heart health, skin health, brain health, digestive health and energy. It has rightfully earned its nickname as "the king of fruits."
All of this is to say that mango sticky rice is a perfect dessert that you should absolutely try. Treat yourself, and take the words "guilty pleasure" out of your vocabulary.
Mango Sticky Rice Ingredients:
1 mango
1 cup bamboo rice, dry
16oz coconut milk
3 tablespoons honey
Salt, to taste
Sesame seeds, to garnish
Coconut flakes, to garnish
Equipment:
2 medium-sized pots
2 small pans
Mango Sticky Rice Recipe
— Lightly salt 2 cups water, add 1 cup of rice, and bring to a boil on the stove over high heat. Reduce heat to low and cover immediately to simmer. Proceed to the steps below while the rice is cooking, for roughly 15 minutes, or until the water is completely absorbed by the rice. Once that happens, fluff the rice, remove from heat, and let rest covered for 5 minutes before plating.
— Peel and slice one mango. We sliced the mango into thin strips, but it's also common to serve thicker chunks of mango.
— Combine the coconut milk, honey, and salt in a pan. Warm over medium-low heat.
— Toast the sesame seeds in a small pan over medium-low heat, tossing frequently until light brown, but not burned.
— Toast the coconut flakes using the same method as the sesame seeds.
— Once the rice is ready, scoop rice onto the plate (if you want to get fancy, fill a bowl or ramekin with rice, then turn it over onto your plate to get a rounded rice pile). Lay the mango on top of the rice, garnish with sesame seeds and coconut flakes, and then pour the coconut milk over top of everything. Serve while still warm and enjoy!
